This delicious summer-favourite fruit is now in season. Mangoes are full of nutritional goodness & packed full of Vitamin C. Did you know that one mango is three times your recommended daily intake of Vitamin C?
Vitamin C plays a role in collagen synthesis and can have an anti-ageing effect. As an antioxidant, it fights off free radicals that can otherwise be damaging to the fibres that support skin structure (collagen and elastin). Vitamin C can also assist with the absorption of iron which is important for transporting oxygen around the body.
Mangoes also contain beta carotene, which is the colour pigment in fruits and vegetables of red or orange nature. The body converts beta carotene into Vitamin A which is important for healthy skin, eyesight and our immune system. Vitamin A is also an antioxidant in the body which helps the body fight against free-radicals produced in the body.
Mangoes are also a rich source of the mineral potassium which is an electrolyte involved with proper nerve and muscle function.
With their powerful nutritional content, mangoes are also quite versatile and can be used in salads or frozen for healthy summer snacks. Check out some different healthy ways you can enjoy mango this summer as part of your diet:
Mango Popsicles
What you will need:
- 4 Mangoes (Pips Removed)
- 2 Kiwi Fruits (Sliced)
- 1 punnet of strawberries (Sliced)
- 3 cups of Greek yogurt
- Blender
- Popsicle Molds or Plastic cups
- Popsicle Sticks
Method:
- Put mango and yoghurt in a blender and puree until a smoothie texture.
- Add fruit slices to the sides of the popsicle molds and pour the mango puree into the molds, place them in the freezer until solid!
Mango Salsa
What you will need:
- 2 mangoes
- 2 avocados
- 1 red onion
- Parsley
- Lemon juice
Method:
- Dice mango, avocado and onion
- Add the parsley and lemon juice to serve
Mango Snack Bars
What you will need:
- 2 mangoes (Diced)
- 1 ½ cups of Greek yoghurt
- 1 Banana (Chopped)
- 1 tbsp honey
- 1 tsp of ground cinnamon
Method:
- Blend mango and banana
- Pour the fruit blend into a baking tray lined with baking paper
- Freeze until solid
- Place combined yoghurt, cinnamon and honey over the solid fruit
- Freeze - Once solid, ready to serve!
- Optional serve with chopped berries and slithered almonds
